<p>“I always like to send people to the Ngorongoro crater but not have them go down into it,” she says of the world’s largest intact volcanic caldera in <a href="https://www.butterfield.com/trip/bespoke/tanzania-bespoke" rel="noopener noreferrer" target="_blank" style="color: rgb(5, 99, 193);">northern Tanzania</a>. “You will do a walk in the area so that you're running into Masai in the morning as they're bringing their cows to graze.” It’s these moments that make planning for experiences outside of a game drive so important. “You're having these serendipitous meetings by just getting out of the car,” she explains.&nbsp;</p><p>What really sets experiences in African countries apart is that human connection. In Rwanda, for instance, Christine loves to design walking trips. Through the early 20th c., she explored, mapped, and excavated the Arab world, and played a major role in creating the modern Middle East. My grandpa gave me this book after listening to my stories about my first trip to Syria, Jordan and Egypt, and pointed out that there was so much more to learn.</p>

Desert Queen: The Extraordinary Life of Gertrude Bell 

<p>From the ruins of ancient Petra to the Bedouin camps, this book provides insight into all aspects of Arabian life through the eyes of John Lewis Burckhardt. He was a Swiss explorer who spent years studying and exploring Arabia and Egypt in preparation for his trip to unearth the source of the River Niger. This work has been selected by scholars as being culturally important, and is part of the knowledge base of civilization as we know it.</p>

Travels in Syria and the Holy Land

<p>A thrilling narrative about the Arab Revolt against the Turks, this classic tale reveals how the Middle East was forever changed during World War I, focusing on a young military officer who was torn between two nations. <em>Lawrence of Arabia </em>was written after four years of intensive document research and captures the action and intensity of the Middle East in the 20th c. It’s a classic story, but I won’t turn a blind eye if you’ve just seen the movie!</p>

Bonus! Jordan in Film

<p>Speaking of movies, some of the world’s most beautiful films were shot in the tiny kingdom of Jordan<span style="color: rgb(77, 81, 86);">—</span>and for good reason. With its otherworldly desert landscape, the Wadi Rum can easily be mistaken for Mars. Director Ridley Scott fell in love with its moonlight granite rocks on a trip to Jordan, and it later became his film set of choice for many movies including <strong><em>The Martian, Prometheus</em></strong> and <strong><em>Kingdom of Heaven</em> </strong>(I always recommend the directors cut!).&nbsp;</p><p>Everyone who visits the Wadi Rum will completely understand what <strong><em>Lawrence of Arabia</em></strong> meant when he used ‘vast, echoing and God-like’ to describe the place, used as the backdrop when Anthony Quinn when rides into the UNESCO Site. <p>It’s no surprise that Vietnam excels at manufacturing, the country has long produced crafts that require precision, patience and skill. Lacquerware, silver carving, silk weaving, lanterns, fans and pottery… artisan families often congregate in villages centred on their particular crafts, so you can wander from house to house to enjoy the many variations on time-honoured techniques.</p>

In ancient sites such as Hanoi’s Temple of Literature right through to their distinctive take on <a href="https://www.economist.com/culture/2022/06/27/vietnamese-modernism-was-ahead-of-its-time" rel="noopener noreferrer" target="_blank">Modernism</a>, Vietnam’s designers usher us in to revel in their creations.</p>

21. Water adventures 

<p>Throughout our Vietnam trip, from north to south, we make use of boats to truly witness the amazing aquatic ways of life that are part of the Vietnamese identity. This can mean a ferry ride across a river during a bike ride; a sumptuous lunch on the Perfume River; or the arrival at the <a href="https://www.sixsenses.com/en/resorts/ninh-van-bay" rel="noopener noreferrer" target="_blank">Six Senses Ninh Van Bay</a>, located on a sun-drenched peninsula accessible only by boat, surrounded by white sand beaches.</p><p>At the resorts on trip, you can also snorkel to explore the underwater coral palaces as shimmering schools of fish swim by.</p>

<p>As the mighty Mekong, the longest river in Asia, approaches the sea, it splits into nine large distributaries called the Nine Heads of the Dragon. Here, husband-and-wife teams steer puttering barges along winding river highways, and the floating markets feature small crafts piled high with durian, pineapple, jackfruit and mangoes. As we pass by on our own boat, we can haggle with them and buy our snacks for the day. Cycling the roads and canal side lanes of the Mekong Delta, we encounter a landscape unlike anything we’ve seen before.</p>

<p>Vietnam is a garment-manufacturing hub, and it shows in the styles worn on the streets: vibrant colours and patterns, each chosen with a personal flair. You can join in the fun by visiting local tailor shops (we know the best in town); whether you’re on the hunt for a new bespoke suit or a comfortable shirt for the warm temperatures, you can have it made to measure and delivered to your hotel within a couple of days!</p>

24. A Trove of History

<p>Vietnamese have a keen sense of history, and we mean deep history: artifacts found in caves date back to 20,000 years ago, and the average person is keenly aware of the dynastic periods, wars with Chinese occupiers, and resistance to colonization over the centuries.</p><p>On our trip, we also encounter the towers of the Cham people, a Hindu culture that 1,000 years ago had an empire along the southern coast of Vietnam. The empire has long since been conquered by the Kinh (Vietnam’s majority ethnic group), Cham people still visit these towers to pay homage to the gods.</p>

<p>It’s more important than ever that we travel with the well-being of the planet in mind, and Vietnam is quickly moving to the forefront of the sustainable travel movement. The <a href="https://www.sixsenses.com/en/resorts/ninh-van-bay" rel="noopener noreferrer" target="_blank">Six Senses Ninh Van Bay</a> is one such example. <h4>BIKING THE 2,000-YEAR-OLD FOSSE WAY ALONG THE KENNET &amp; AVON CANAL</h4>
<p>The Fosse Way is a Roman road of mid-1st c. origin, built partly along a temporary frontier line. This route is a cyclist&#8217;s dream as it&#8217;s one of the straightest roads in Britain! Following it out of the Cotswolds&#8217; high rolling hills, this route drops into the Bath basin and leads you directly into the heart of this UNESCO-listed city. The best way into Bath is along its canals. Great for cycling, the Kennet and Avon Canal passes aqueducts, locks and plenty of waterside hospitality in the form of inns, gastropubs and canal boat cafés. Hopping off of the canal at the Holburne Museum, you’ll find yourself in the centre of one of the prettiest towns in England, complete with cobbled streets and brilliant sandy limestone Georgian architecture.</p>

This challenging route winds down lanes and over heathland to link the hills to Devon’s pretty thatched hamlets, villages, inns and more.</p>

Each villa is more stunning than the next, and the estate’s vast Umbrian grounds offer an array of activities–from horseback riding to truffle hunting, cooking lessons to gravel biking–that you might never leave… though visits to nearby cities like Cortona and Perugia are worth the effort.</p>
<p>Each of Reschio’s properties is impeccable, but to highlight a few: I love the eat-in kitchen, massive outdoor fireplace and charming bunk-beds of Bell’Aria for a large group with kids, the cozy rooms and personal wine cellar of Piantaverna for an intimate off-season escape, and Barco’s proximity to the estate’s stables and tennis courts while offering placid gardens to come home to, for those who like to play hard and rest easy. Oh, and no matter where you turn, the majesty of the unspoilt landscape is overwhelming (in a good way).</p>

<p>The lovely Villa Ferida offers a real sense of home, perfect for a group of friends to get away and soak in the exclusive side of La Dolce Vita. Also located in Praiano for excellent access to all areas of the Amalfi Coast, the reserved villa features a private indoor spa as well as a secluded outdoor pool–but don’t worry, the beach is just a 10-minute walk from your front door.</p>
<p>I personally love to visit this area in early autumn when the crowds have cleared away and the locals are relaxed; in fact, I even went for a delightful swim myself in Praiano this past October. Villa Ferida offers all that accessibility in a jewel-box coastal home that’s marked by simple luxury.</p>

<p>I’ll just come out and say it: Villa Bideri has the biggest private pool that you’ll find on the Amalfi Coast. Strategically located in Praiano–an authentic, less touristy part of the Amalfi Coast–but with easy (water taxi) access to Positano or Amalfi, Villa Bideri’s bright sea-view rooms and wide whitewashed terraces will have you partying with Poseidon in no time. There’s lots of space for a big celebration, whether poolside or piled into private boats for long, sun-soaked days at sea tooling around the coast, or venturing to glamorous Capri. Just ask your skipper to set sail towards the freshest plate of <em>spaghetti alle vongole</em>.</p>
<p>Alternatively, I’ve had great success stoking the coals of the villa’s wood-burning pizza oven for a fun pizza night making the region’s most famous (and most favourite) meal.</p>

<p>Not far away from San Quirico lies the minute, little-known village of Bagno Vignoni—a hamlet quite unlike the other hilltop villages in Tuscany.</p>

<p>Every Tuscan town is built around the main square, but in Bagno Vignoni, instead of a piazza, you’ll find an enormous natural pool fed by Tuscany’s hottest underground thermal spring. The town dates back to the Etruscan era, and the curative Italian tradition of “taking the waters” continues today.</p>
<p>There are plenty of cute eateries where you can enjoy a Tuscan dish or two, and if you time your visit to Wednesday or Saturday evenings, we recommend enjoying the thermal baths under the stars at Posta Marcucci.</p>


<h2>Siena</h2>
<p>Siena, whose San Biago church is pictured above, is the biggest town on our list, but its qualifications as a hilltop beauty are much more than satisfactory.</p>
<p>For starters, it boasts a monumental Cathedral complex, which is considered to be the most beautiful in Tuscany (stand down, Florentines!). If you visit in the weeks of September and October, you can view the cathedral’s jaw-dropping mosaic marble floor, which Giorgio Vasari called “the most beautiful and magnificent” floor ever made.</p>
<p>In addition to incredible history, Siena offers lanes and lanes of shopping and gastronomic paradises. Our favourite place to grab a pre-dinner aperitivo drink is in the main square, Piazza del Campo, where each year <a href="https://www.butterfield.com/blog/2016/09/28/siena-horse-race/" target="_blank" rel="noopener">the Palio horse race</a> takes place.</p>

<p>Cortona is a fairytale town built vertically along a steep slope in the Valdichiana Valley, boasting magical views of sunflower fields and Lake Trasimeno: it’s no wonder the town inspired Frances Mayes to pen her most famous book, Under the Tuscan Sun.</p>
<p>The village is the perfect size for a day spent strolling through its historic city center, with plenty of authentic local flavour amongst handmade ceramic shops, outdoor cafes, and a beautiful piazza crowned by the Teatro Signorelli opera house.</p>
<p>Nearby, you can also find Le Celle Convento, the first monastery built by St. Francis of Assisi still active today.</p>

<p><span style="font-weight: 400;">Recently, Annik orchestrated a family stay at the </span><a href="https://aubergeresorts.com/bluesky/" target="_blank" rel="noopener"><span style="font-weight: 400;">Lodge at Blue Sky</span></a><span style="font-weight: 400;">, a luxury private ranch in the mountains of Utah, outside Salt Lake City. The group took over the property for a secluded vacation in the heart of nature. </span></p>
<p><span style="font-weight: 400;">Guided by her expertise, Annik helped facilitate daily excursions and activities for the family and acted as a personal concierge and liaison between the travellers and the property, ensuring important details like babysitters, dinner reservations and tweaking events to make them suitable for children were all taken care of. </span></p>
<p><span style="font-weight: 400;">Annik is now looking at more ways of showing Americans a new side of their home country, such as </span><span style="font-weight: 400;">a private houseboat charter on Lake Powell or luxury camping on the secluded North Rim of the Grand Canyon.</span></p>

<p>Of particular note are the rice dishes, made with locally cultivated grains grown right in Pals. The restaurant has been awarded a Michelin Bib Gourmand award, offering good value and quality.</p>
<h2><strong>Calçotada Festival</strong></h2>
<p>This one is a little odd, but I had to mention this truly local happening: one of the more charming folk festivals in the region is the <a href="https://www.festacatalunya.cat/articles-mostra-1542-cat-festa_de_la_calyotada_de_valls.htm" target="_blank" rel="noopener">calçotada festival</a>, held in Valls around late January. Through the winter season, the delicious <a href="https://en.wikipedia.org/wiki/Cal%C3%A7ot" target="_blank" rel="noopener">calçot</a> (akin to a scallion or green onion) comes into season; it is celebrated all throughout Catalonia by locals who eagerly anticipate its return.</p>
<p>Be prepared to get messy when you eat them: the vegetable is blackened over a fire; eaters then peel away the charred outer skins to feast on the tender white portions, dipping them in romesco sauce as an accompaniment. (Bibs are a necessity, although they may not help entirely). The rest of this traditional feast is comprised of roasted lamb, sausage, and white beans. If you’re in town during the calçot season, it goes without saying that you must try this specialty.</p>

You can’t miss its white Scandinavian-cool interior. Take a deep breath, and refuel for the rest of your day. Rumour has it, they also serve the famous Five Elephant cheesecake here too…</p>

<p>The terrace of the Maison du Colombier, which overlooks the Notre-Dame church, is an unparalleled location to savour a glass of Grand Cru at the end of a long ride!</p>
<p>Maison du Colombier has an impressive wine list that features the delights of Burgundy, along with the rest of France’s most talented winemakers. La Dilettante, with a smaller, more casual atmosphere, will serve you delicious local fare, along with a selection of mostly Burgundy wines, as well as <a href="https://en.wikipedia.org/wiki/Biodynamic_wine">biodynamic</a> and <a href="https://en.wikipedia.org/wiki/Natural_wine">natural</a> wines.<br />

<span>Where to Eat:</span><br> Our Favourite Beaune Restaurants

<p>You may see (or at least hear) some nearby goats and you will certainly smell oregano, thyme and wild fennel. We recommend that you end your walk at the village of Nocelle (about 2 – 2 ½ hours), as you will have experienced the best of the trail and you get to avoid about 1,500 downhill steps to get to the sea! You can take either a bus or taxi and in 15 minutes you are in another world, where you exchange the rustic beauty of the Milky Mountains for the luxurious Amalfi Coast.</p>

<h2>5. Austria &#8211; Wachau World Heritage Trail on the Danube</h2>
<p>This gorgeous hike, one of Austria’s most beautiful both landscape-wise and culturally, does not &#8211; surprisingly &#8211; take place in the Alps but rather in the <a href="http://whc.unesco.org/en/list/970" target="_blank" rel="noopener noreferrer">UNESCO World Heritage Wachau Valley</a> wine district along the banks of the Danube.</p>
<p>It starts riverside in picturesque Dürnstein, &#8220;Pearl of the Wachau&#8221; with its landmark blue monastery tower. It then climbs up along the old mule path to Dürnstein&#8217;s other landmark, Austria’s most famous castle ruins where Richard the Lionheart was held for ransom in the 11th century. The Wachau, the 25 km (15 mi.) section upstream from here to Melk Monastery, is generally considered the most beautiful on the whole Danube. Towering over the village, the vineyards and the mighty Danube, the views down to the river as it curves upstream through the steep river valley with 1000 year-old terraced vineyards and medieval wine-making villages is one of Europe’s classic images.</p>

<p>After the ruins, the path passes through tranquil oak and pine forest to the Schlossberg peak, then follows the ridge through forest and meadow, parallel to the river, in the direction of Weissenkirchen, the next charming wine-making village upstream. Views periodically open up onto new perspectives over the river but also in the other direction over the thickly forested hills of the Waldviertel district. In the last third of the hike, the path passes down through the many-layered ancient wine terraces that are characteristic of the region and were a main reason for its UNESCO status. Passing through the narrow historic streets of the village, it ends at the Renaissance palace, Tesienhoferhof.</p>

<h2>6. Iceland &#8211; Thorsmork</h2>
<p>Walk in the wilderness area known as Thorsmork (Thor&#8217;s Forest) on the north side of Eyjafjallajokull volcano. It is here that the effects of the massive eruption of 2010 are most clearly visible: hills covered with ash, flood debris scattered across the valley floor, steam rising from tunnels in Gigjokull glacier. Take a hike across the otherworldly landscape leading to the site where floodwaters gushed out from under the glacier during the eruption of April and May, 2010. Hike up to view-points or explore one of the countless gullies and ravines that dissect the north face of the volcano.</p>

<h2>7. Corsica &#8211; Into Bonifacio via Pertusato</h2>
<p>As you walk past dry stone walls and thread on narrow stony paths through the maquis, catching the scent of lavender, wild arba barona thyme, everlasting and juniper, the wind brushes your cheek and the stunning white chalk of Capo Pertusato, Corsica’s southernmost tip, stands out against the impossibly turquoise waters beneath.  Once passing the lighthouses, and some half-standing walls of ancient barracks, you make your way above the cliffs towards Bonifacio.</p>
<p>As Paul Valéry wrote, “as far as sheer beauty is concerned, Bonifacio is the unrivalled capital of Corsica” – and catching sight of it in the distance, it looks like a dream city! Each step brings you closer to this Italianate mirage atop sheer white cliffs.</p>

<h2>8. Burgundy &#8211; The Rhoin Valley</h2>

Journey through lush woods before reaching impressive cliffs at les Roches du Chatelet which offers plunging views of the valley below and the village of Bouilland far in the distance. If you’re lucky, you might even see a peregrine falcon, which often choose this area for their nests.</p>
<p>Witness history as you pass in front of the Abbaye Sainte Marguerite, which was built at the end of the 11th century by monks of the order of Saint Augustine. Finally, you&#8217;ll reach the ancient village of Bouilland which took its name from the French word, <em>bouillonnante</em>, which describes the bubbling waters of the river.</p>

<h2>9. The Italian Lakes &#8211; Bellano to Varenna via Vezio</h2>
<p>This stunning walk has it all from cozy <em>caffès</em> dotting the lake-shore to soaring Alps that beautifully rim the northern horizon. Following an ancient trading path, you&#8217;ll pass quaint villages, quiet forest paths and peaceful asphalt stretches. Your steps will eventually lead you to the perched town of Vezio. Stop here for a taste of mountain-fare that locals have been savouring for generations. After drinking in the gorgeous south-facing views of the Bellagio&#8217;s proud peninsula splitting the Como into two legs, stroll down to Varenno for a taste of authentic gelato.</p>

<h2>The Wild Card – Street Style</h2>
<h3><strong>Quan An Ngon</strong></h3>
<p><span style="font-weight: 400;">This one will be a bit of a wild card. Quan An Ngon is, to me, the best way to experience street food without being on the street. If you want to be in one place where you can try all sorts of delicious and wonderfully varied local cuisine then this is your spot. Whenever I choose to go here I am never disappointed.</span></p>
<p><span style="font-weight: 400;">I walk into the large courtyard-type atmosphere full of locals and the odd back-packer and I slowly take in the scene to realize that now, after all of these years of coming in and out of Vietnam—to a foreign country with a language that still beguiles me and ingredients that in my childhood would look like something out of a Doctor Seuss book and a pace that can feel frantic and elegant all at the same time—it feels like home. To get close, or at least within proximity, of all of my feelings above, head to 18 Phan Boi Chau Street, Hoan Kiem District.</span></p>
<h2>Capital Cafes</h2>
<p><span style="font-weight: 400;">Vietnam is the second-largest producer of coffee in the world, and every Vietnamese city, town and hamlet boasts numerous relaxing cafes, where locals trade morning gossip or relax in the shade during the afternoon heat. We’d be remiss if we didn’t include some of our favourite cafes on the list. Among the many, many worthy choices in Hanoi, here are some of our favourites:</span></p>
<h3><a href="https://www.facebook.com/rengrengcafe" target="_blank" rel="noopener"><b>Reng Reng</b></a><b> </b></h3>
<p><span style="font-weight: 400;">For coffee connoisseurs, this is the place to go! Much of Vietnam’s coffee is Robusta, but there are Arabica producers north of Hanoi. Reng Reng serves only this fine Vietnamese Arabica coffee with just a few variations. What more could you want, after all? As a bonus, the walk through the old quarter to the alleyway coffee shop is a joyful stimulant in itself. Sit in the minimalist second-floor room, look out on the local life, and savour that fragrance. Do one thing, and do it well; that’s the Reng Reng philosophy!</span></p>
<h3><a href="https://goo.gl/maps/bMm4y9yFkgtbi8n58" target="_blank" rel="noopener"><b>Đinh Cafe</b></a></h3>
<p><span style="font-weight: 400;">Enter this old-style café via a deep, narrow alleyway and set of stairs. The interior looks like it hasn’t been remodeled in decades, and in this case, that’s the whole point. If you go early, you can be there among the locals and enjoy the view of Hoan Kiem Lake and the Temple of the Jade Mountain. The menu includes regular coffees, egg coffee (a Hanoi specialty first concocted by a resourceful bartender in the 1940s at the B&amp;R stalwart Metropole Hotel), as well as refreshing smoothies and fruit juices.</span></p>

This is another option for a variety of drinks (including egg coffee) right near Hoan Kiem Lake. Three levels of seating areas, including the rooftop, overlook the airy courtyard full of bright flowers. </span></p>

<p>No matter where I travel there is always one day in a week when I am overcome with a need for good pizza. And I am not talking about throwing processed cheese onto some dough and tossing it mindlessly into a fire! No, I am talking about Pizza: traditional Italian pizza that is usually only found in Italy proper. Luckily, there are, in my opinion, more and more places throughout the world that are no longer satisfied with presenting the poorer cousin to pizza, the international imitator, as I call it. Pizza 4p’s in Hanoi would make an old man with white hair and a curled mustache in Naples proud.</p>
<p>Located at 24 Lý Quốc Sư, Hàng Trống, Hoàn Kiếm, Pizza 4p’s makes its own cheese using dairy cows that graze in the highlands around Dalat. Focusing on the freshest local ingredients, each pizza tastes like it has been made with love and care and extreme attention to ratios. My favourite (if you’re looking for suggestions) is the Shrimp Mayo pizza on half and the four cheeses on the other. Then, I take the spicy oil and pour it onto my pizza (careful, it is quite spicy). I follow this with a sip of Chianti and this, my friends, I promise you, is a satisfying night out!</p>
<h2>The Lake View</h2>
<h3><a href="http://www.caugorestaurant.com/" target="_blank" rel="noopener">Cau Go</a></h3>
<p>Situated on the sixth floor overlooking the watery oasis of Hoàn Kiem lake, you&#8217;ll be rewarded with sweeping views of Hanoi at Cau Go. Located in the old quarter, its interior gives off an eclectic French Colonial vibe without trying too hard to be fussy. <span style="font-weight: 400;">Currently, their menu is restricted to Vietnamese hot pot (<em>lẩu</em>) due to renovations. However, this should change soon! Drinks, snacks, and entrees are served daily from 10 a.m. If you can, request an outdoor table for a lovely patio view of Turtle Tower and Hanoi’s glittering lakeside.</span></p>

<h3>Pho Thin</h3>
<p>When I want pho, I also want what comes with pho. I want the shared tables and the loud crowds, the chopsticks on the tables and the bowls of chillies and limes and the fish sauce that came from an old family recipe passed down from generation to generation.  I want to hear slurping, and laughing and children, and I want my shoulders to be side by side with a local as we lean forward and savour our bowls noodle at a time.  I want to make conspiratorial eye contact with the old woman across the table as I bring the bowl up to my mouth at the completion of the noodles and drink the remaining broth.  Located on 13 Lo Duc, Hai Ba Trung District, Hanoi 10000, Vietnam.  Come here for the Pho and leave a changed person….or at least a satiated one!</p>


<h2>The Colonial</h2>

This bar to me sums up colonial elegance and makes me feel like I am someone a little more important than I am, a little more attractive, a little worldlier.</p>
<p>Poolside, I usually order some light tapas off the bar menu which includes popcorn shrimp served with a spicy red chilli dipping sauce, some crudities and a cheese plate full of French cheeses that are just sharp enough to force me to follow my martini with a glass of rich French red wine. I like this bar. I like this bar a lot.</p>

<h5>Starting From the Bottom</h5>
<p>In Peru, Mitsuharu was an up and coming young chef with a fancy degree from America. In Japan, he was an unknown entity with no local experience to speak of.</p>
<p><img loading="lazy" class="alignright size-medium wp-image-31832" src="http://www.butterfield.com/blog/wp-content/uploads/2016/10/Maido-Mitsuharu-Tsumura-dishes-320x300.jpg" alt="maido-mitsuharu-tsumura-dishes" width="320" height="300" />But if nothing else – and there was, truly, nothing else – he had a connection. His grandparents, who still lived in Japan, introduced him to a man named Mr. Hirai, the owner of a well known restaurant called Seto Sushi.</p>
<p>After watching him filet fish, Mr. Hirai agreed to give Mitsuharu a job. The pay was nonexistent and the work gruelling. It was a start.</p>
<p>For four months Mitsuharu showed up everyday to wash dishes, never so much as touching a knife. After establishing himself as a competent dishwasher, he was elevated to the post of knife sharpener. Eventually he became proficient enough to sharpen knives for every chef in the restaurant, a huge honour by the standards of Japanese restaurants.</p>
<p>Though he was still miles away from being able to prepare food for the restaurant, in Japan everything has a purpose. While he wasn’t yet making sushi, he was watching, observing the masters, and learning patience and discipline. It was a quintessentially Japanese apprenticeship.</p>

<p>Around this time, he started practicing his own knife skills. To master the fine art of sushi making he would practice on rice and gherkins, preparing thousands of them to hone his skills.</p>
<p>He continued to work his way up the ladder at Seto, taking over responsibility for receiving and cleaning seafood. This eventually led to filleting and preparing fish, cooking rice for the staff’s meals and working behind the bar, until one day, two years after arriving in Japan, he had finally earned his keep.</p>
<p>Mitsuharu began to make sushi.</p>

<h2>Pulled Back to Peru</h2>
<p><img loading="lazy" class="alignright wp-image-31838" src="http://www.butterfield.com/blog/wp-content/uploads/2016/10/Maido-Mitsuharu-Tsumura-dish.jpg" alt="maido-mitsuharu-tsumura-dish" width="350" height="236" />He stayed in Japan for eight more months perfecting his craft until one day Mitsuharu felt the pull of his native Peru beckoning him back home.</p>
<p>The Sheraton Lima, where he had interned years ago, invited him to return as a member of their chef team, where he began his journey up the hotel’s ranks.</p>
<p>And now here he was, three years after returning to Peru and on the precipice of the hotel’s highest position, feeling conflicted.</p>

<h5>A Conundrum Turned Culmination</h5>
<p>Again he turned to his father for advice and again his father was stern and resolute – but this time, he had very different advice for his son.</p>
<p>“Son, you have proved to be a good worker and I am going to invest in you,” he said. “Open your restaurant, I will support you.”</p>
<p>Today that restaurant is <a href="http://www.maido.pe/en/index.php" target="_blank" rel="noopener">Maido</a>, where Mitsuhara draws from his experience and heritage to prepare Japanese and Peruvian dishes, telling a story with each plate he serves.</p>
<p>In 2016, Mitsuhara and Maido landed at <a href="http://www.theworlds50best.com/list/1-50-winners/Maido" target="_blank" rel="noopener">number 13</a> on the coveted World’s 50 Best Restaurants list (<a href="http://www.theworlds50best.com/latinamerica/en/the-list.html" target="_blank" rel="noopener">and number 2 in Latin America</a>), winning the <a href="http://www.theworlds50best.com/awards/highest-climber-sponsored-by-lavazza" target="_blank" rel="noopener">Highest Climber Award</a> in the process.</p>
<p>He’s come a long way since that conundrum.</p>

<p>Fortunately, you don&#8217;t need to spend two years apprenticing at a Japanese sushi restaurant to develop a taste for Mitsuhara&#8217;s cooking.</p>

<h5>For sauteed beans:</h5>
<p>Regional cooked beans 60gr<br />
Or any beans you like.<br />
Chopped red onion inbrunoise 8gr<br />
Chopped garlic in brunoise 4 gr<br />
Chopped ginger 4 gr<br />
Sesame oil 20 ml<br />
Salt<br />
Pepper</p>
<h5>For the Sweet Quince:</h5>
<p>Quince 200 gr<br />
White sugar 100 gr<br />
Cinnamon 2 gr<br />
Water 200 ml</p>
<h5>For the Grain Soil:</h5>
<p>Ground coffee 35 gr<br />
Honey 50 gr<br />
flour 20 gr<br />
Unsalted butter 15 gr</p>
<h5>Ponzu Gel (250 gr):</h5>
<p>Ponzu 250 ml<br />
Xantana 2 gr</p>
<p>Crispy Quinoa (20 units )<br />
Black Quinoa 50 gr</p>
<h4>Instructions</h4>
<h5>For Avocado Cream:</h5>
<p>In a blender add all the ingredients and process until you get a smooth cream. Reserve cold.</p>
<h5>For Dashi:</h5>
<p>Hydrate the kombu in water for 12 hours. In a saucepan place the water with kombu to medium heat until it reaches 80 degrees C° and after reaching this temperature add the katsuobushi and put out the fire. Leave to infuse for 20 minutes with the lid on. After 20 minutes, strain with a thin gauze to prevent remains.</p>
<h5>For Sauteed Beans:</h5>
<p>In a pan saute the garlic with the onion, the ginger and the cooked beans for about 2 minutes and season with salt and pepper, add the sesame oil and put out the fire. Reserve cold.</p>
<h5>For the Sweet Quince:</h5>
<p>Clean the quince and cut into 1-cm cubes, with the excess of quince make an infusion with cinnamon and reserve. In a pan make a syrup with water and sugar and add the cubes of quince with the previous infusion and cook for 3 minutes. Reserve cold.</p>
<h5>For the Grain Soil:</h5>
<p>Temper the butter. Crush the Chulpi corn until obtain a kind of coarse ground. In a bowl mix all ingredients until you have a kind of dough. Spread the dough on a plate and bake at 150 degrees C. for 10 minutes. Remove, let cool and keep in a sealed container.</p>
<h5>For the Ponzu gel:</h5>
<p>With a mixer blend the ingredients until the Ponzu take gel texture. Reserve cold.</p>
<h5>For the Crispy Quinoa:</h5>
<p>In a blender place the Quinoa with little water and blend until completely ground, place the mixture in a pan and cook for 10 minutes over medium heat. Roll out the mixture on a Silpat , try to stretch as thin as possible and bake at 120 degrees for approximately 30 minutes. Reserve in a dry place.</p>
<p>In a cold dish place as a base a line of avocado cream. On top of the avocado cream place the sauteed beans simulating a kind of garden. Embed the crispy quinoa on the avocado and placed the quince´s cubes. Finish the plating putting Ponzu gel drops and grain soil and decorate with flowers and sprouts.</p>
<p>Serve cold.</p>

<h3>Pizza Phan Luang</h3>
<p>Pizza. Do I need to say more? This little pizza restaurant is located across the Nam Khan River and in the back courtyard on a residential street.  The first time I went looking for it, after a serendipitous tip from an old friend, I was on a street thinking I was completely lost and then there it was like an oasis: a tiny sign adorned with a picture of a pizza pie entreating me down a narrow path to the right of an un-lit house.  (I took the path, possibly less travelled, and to this day I am so glad I did.)  This restaurant is owned by a French Canadian man and his Laotian wife. He is both the chef and the waiter, so don’t be surprised if there is a bit of a wait. I can, however, vouch that it is well worth both the effort to find this place and the likely wait to get your pizza. The ingredients are super fresh and the dough a delicious mix of soft and crisp with a light dusting of flour. <em>Voila!</em></p>
<h2>The Real Deal &#8211; Lao-style BBQ Restaurant</h2>

This is what I now refer to as the exotic effect.</p>
<p>Being in a new place so totally different from where you hail from can act to reset your compass just enough to make you open up to a new definition of what you do and do not do, eat, try, wear, etc.  This is all to preface one of my favourite ‘adventurous-eater’ spots: Dyen Sabai.  This is one great Lao-style BBQ restaurant that is a must stop if you have a few days in town and a new sense of self!  This place has the most laid back approach to dining as the seating is largely reclined and the views look out over the Nam Khan River.  This place makes me feel fresh and as if I could redefine my whole self…or just eat a damn good meal on the banks of a stunning river. Not a bad endeavour either way.</p>
<h2>The Educational Meal &#8211; a Cooking School</h2>
<h3><a href="http://www.tamarindlaos.com/" target="_blank" rel="noopener">Tamarind</a></h3>
<p>This is a cooking school and restaurant that in my opinion does the best job at leading you through local cuisine in an uncomplicated, un-intimidating way.  Each dish is presented by one of the staff and the history of the dish is explained, as well as the proper way to eat it.  I love being educated about local customs and food, so this place holds a special place in my heart for helping me understand Laos a bit better, not to mention the fact that it is delicious.  My favorite drink on the menu is a banana, coconut, cinnamon smoothie and my favorite thing to order is a Mung platter full of things like smoked eggplant, lemongrass, rice noodles, and river weeds…trust me—It’s delicious!!</p>

<p>“Local” restaurants are a dime a dozen these days, but 15 years ago the Khemer Kitchen was the only game in town.</p>
<p>And ever since, it<span style="font-weight: 400;"> has remained a shining light of friendly service in a casual setting. You can leave your credit card at home, just be sure to come with at least ten dollars – you&#8217;ll likely spend less than that per person!</span></p>

<p>A traditional home-style comfort food spot that&#8217;s famous for it&#8217;s Amok.</p>
<p>They have a big menu with lots of vegetarian options and the food is great.</p>

<p>Chanrey Tree has been around for a couple of years now and probably offers the best balance between fancy and good in town. They&#8217;re in a great location on the river and have terrific, friendly service.</p>

<p>After many years of trying, I finally got to eat at the most famous game in town. And let me tell you, it was worth the wait – I will definitely be heading back.</p>
<p>Fantastic Cambodian food cooked by a top French chef and served by his lovely partner. The whole thing is set in a traditional Khmer home and it just <em>works</em>.</p>

Yes, it&#8217;s a training restaurant, but under the tutelage of experts, they produce excellent cuisine!</p>
<p style="font-weight: 400;">Beneath a bamboo canopy, sample a wide array of Khmer dishes, including their scrumptious chicken wings with amok sauce!</p>

<h3>The Verdict</h3>
<p>After sampling amok and many other tasty delicacies at (what I consider) to be the best restaurants in Siem Reap, I have to confess that for my money, the best dinner option in the city is the three-dollar (that&#8217;s right – three dollars!) curry from Khmer Kitchen.</p>

What is a muffaletta? It’s a mythological concoction of round Italian bread, cold cuts, cheeses and olive salad. Be warned: share one sandwich between two people or you’ll be overwhelmed!</p>
